ETNA BIANCO

With the name “Aedes,” from the Latin word for “home” or “family,” we want to convey the essence of our wine: warmth and familiarity, but also the sense of belonging and welcome that characterizes every moment spent between vineyard and winery.

GRAPE VARIETIES:

Carricante (60%), Grecanico, Catarratto, Minnella.

VINEYARDS:

Contrada Moganazzi, Castiglione di Sicilia, northern slope of Etna Contrada Mertoli, Mascali, eastern slope of Etna

TYPE OF CULTIVATION:

Espalier, 7,000 plants per hectare and counter-espalier, currently in conversion to the bush system.

AGE OF VINEYARDS:

10 years or so.

ALTITUDE:

650 m asl

SOIL TYPE:

Sandy, volcanic, very mineral-rich, subacid-reacting

VINIFICATION:

The grapes are harvested by hand, the second half of September with careful sorting and placed in low crates to be brought intact to the winery, where they are pressed whole with soft pressing of the bunch. Fermentation takes place at a temperature of 20°C in stainless steel. Aging: About 6 months in the same steel tanks.

ORGANOLEPTIC CHARACTERISTICS:

Color: light golden yellow, bright. Nose: ample, full, floral with notes of broom and citrus. Aromas: satisfying, dry, fresh, mineral sip with great versatility.
